Compassionate Action for Animals encourages people to embrace their empathy for animals and move towards a plant-based diet so all animals, human and non-human, can thrive. We welcome everyone who is vegan, moving towards plant-based eating, or looking for information or support.

Learn to Make Vegan Cauliflower Pesto Lasagna with Tamuno Imbu!
Join Tamuno Imbu, CAA’s Community Organizer, for an exciting online cooking class featuring a delicious and veggie-packed Cauliflower Pesto Lasagna! This plant-forward dish is perfect for a hearty family meal or a make-ahead freezer-friendly dinner. Whether you’re looking for new ways to enjoy vegetables or just love a good lasagna, this class is for you!
This recipe was originally created for Veganuary and it swappes out turkey for cauliflower for a creative version which adds more veggies to our plates. It also uses vegan versions of ricotta, parmesan and mozzarella. And Tamuno will even go the extra mile by making his own pesto!### What to Expect
Tamuno will take you through each step, making this recipe easy and accessible for all skill levels. Cook along or simply watch and learn—you’ll walk away with the skills to make this flavorful dish anytime.

If you’d like to cook along, have these ingredients ready:
- 1 package no-bake lasagna noodles
- 1 head cauliflower (separated into florets)
- 1 can whole plum tomatoes (crushed)
- 2 tablespoons tomato paste
- 1 cup non-dairy ricotta
- 2 cups shredded non-dairy mozzarella cheese
- ½ cup grated non-dairy parmesan cheese
- ½ cup + 2 tablespoons olive oil
- 1.5 cups water
- 7 cloves garlic (1 chopped, 3 sliced, 3 whole)
- ½ teaspoon salt (optional)
- 2.5 cups fresh basil leaves (chopped)
- 2 tablespoons fresh parsley (chopped)
This must-make, plant-forward dish is packed with flavor and makes a great addition to your meal rotation. Whether you’re cooking for a group or prepping ahead for yourself, this lasagna is sure to be a hit.

Cooking With Tamuno is an online cooking class offered one weeknight a month from 5:30 – 6:30 pm. CAA’s Community Organizer, Tamuno Imbu is our resident chef extraordinaire. Each month, he selects a vegan recipe that is particularly tasty and easy to make. During the class, he slowly and clearly demonstrates the steps to make the meal. He is also more than willing to take questions — he wants to be sure you walk away with the ability to make each recipe on your own.He shares the ingredients ahead of time so that you can purchase them and cook along in real time. But it’s also okay to just sit back, watch, and learn. No cooking experience is required as he gears this for people who are new to plant-based cooking.
All are welcome to cook
Everyone is welcome at these fun online events. Join Tamuno and learn some plant-based cooking skills, all while having an opportunity to meet some of the youth and other participants. You will come away with new recipes and some handy cooking tips. Be prepared to impress your friends and family with your new-found skills! Or better yet, bring them along to the class so they can get these skills for themselves too.Young people frequently join the classes through relationships with partner organizations. Tamuno also works with these youth in other ways, including leadership programming and introducing them to the issues surrounding living a more compassionate lifestyle.
